Day 25: Strawberry Sugar Cookies with an Oreo in the Middle


I don’t know what my Oreo deal is lately but I’m not upset about it. I found a recipe on Pintrest about soft cream cheese chocolate chip cookies and since I have leftover cream cheese and Oreos, I figured I’d adapt the recipe for my leftovers.
I still have the Strawberry and Blueberry cream cheese from the truffles I made a couple weeks ago so I figured instead of making chocolate chip cookies I could make an almost strawberry or blueberry sugar cookie instead with white chocolate or butterscotch chips instead of chocolate chips.
Then I realized I have those Oreos in my cupboard still and wanted to jazz the cookies up some more so why not wrap an Oreo in this goodness?? The end result was a soft and delicious Strawberry cookie wrapped over and Oreo and it was delightful!

*Ingredients
½ cup unsalted butter
¼ cup Strawberry Cream Cheese (I used the spreadable kind)
¾ cup dark brown sugar
¼ cup granulated sugar
1 large egg
2 teaspoons vanilla extract
2 ¼ cups all-purpose flour
2 tsp cornstarch
1 tsp baking soda
¼ tsp salt (omit if using salted butter)
14 Oreos (For strawberry cream cheese, I used cinnamon bun and golden Oreos)

*Directions
In your stand mixer combine softened butter, cream cheese, sugars, egg, and vanilla. Beat on medium- medium/high speed until your mixture is creamy, light, and fluffy- should take 3-5 minutes. Add flour, cornstarch, baking soda, salt if needed, scrape down sides of bowl and beat to combine mix. Scoop your mix onto a piece of saran wrap and wrap dough tightly. Refrigerate for at least 2 hours.
Once your dough is chilled, preheat oven to 350 and prepare baking dish by greasing with non stick spray. Take a medium scoop and scoop out balls from your dough, it should make about 28. Once the balls of dough are rolled, press them out so they’re big enough to cover your Oreo. Place one cookie on top of your Oreo and one underneath. Seal cookie dough around Oreo and place on baking sheet. If you’re using the Cinnamon bun Oreo you can sprinkle some cinnamon and sugar on top of it, if you’re using the Golden Oreo, you can sprinkle some crushed Graham Crackers.
Bake for 10-12 minutes, and place on cooling rack. Your cookies will be soft but will continue to cook while on cooling rack.

**If you don’t have Oreos but want to make these cookies, just use about 2 cups of white chocolate chips or butterscotch chips and stir them into your dough before you place in fridge. I made butterscotch, vanilla, and Oreo for this batch just to try them out and the Oreo was my favorite but the others did come out quite nicely.
