Day 24: Honey Mustard Mahi

At least twice a week I try not to eat meat and my go to protein is Salmon. It's healthy, isn't too "fishy" and you can add a lot of flavor to it. Normally, I just season it with salt, pepper, garlic powder, and onion powder but I've been trying to be more adventurous with it and I had a taste for mustard tonight. The addition of the lemon and fresh scallions really brightens up the dish and makes it light but boldly flavored.

What makes this meal so great is you literally throw everything in a freezer bag, smush around the ingredients to incorporate everything and coat the fish and once it's done marinating you just toss it on a baking sheet to cook. For once, I made the fish in a one person serving since my husband ate leftover Tacos tonight, so feel free to increase measurements if it's more than one person enjoying the meal.

*Ingredients
1 6 oz piece of fresh, wild, Salmon
1 TBS Dijon Mustard
1 tsp honey
Zest of 1 lemon
Juice of a half of a lemon
1 TBS minced garlic
3 TBS chopped Chives
1 tsp onion powder
salt/pepper

*Directions
Place piece of fish in a zip-lock bag. Add all ingredients to bag. Seal the zip-lock bag and smush ingredients together to mix and coat the piece of salmon. Place in fridge for at least an hour. When ready to bake, preheat oven to 425 degrees. Pour out Salmon on foiled baking sheet that has been sprayed with non stick spray (or greased with oil), bake for 15-20 minutes.
