I'm all about taco night but sometimes, life happens and you're just way too busy and tired to make a big production about dinner. I worked a full day, went to the gym, did a second workout at home, had to shower and then cook dinner. That does not leave a lot of time to spend in the kitchen for dinner.
Since it's Taco Tuesday in our house, I went for this quick, tasty, and healthy taco recipe. My previous post had a homemade salsa, but this recipe is one for those busy days and just needing to whip something up for dinner- without missing out on great flavor. I love using a black bean and corn salsa because you get a great texture from the beans and a nice little burst of sweetness from the corn. I like to pair the peach salsa with the bean salsa because one is spicy and one is sweet. They balance each other and bring out so much flavor- you barely need to add any other seasonings to it!
The best thing about tacos is that you can personalize them according to your own personal taste, so feel free to play around with some flavors to make these your own!
*Ingredients
1 16 oz 94% lean ground Turkey package
1 cup Black bean and corn salsa
½ cup Peach salsa
1 lime
1 avocado
Corn or flour tortilla (I use corn, my husband flour)
2 tsp Smoked Paprika
¼ tsp Onion powder
¼ tsp Garlic Powder
2 tsp ground Cumin
¼ tsp Chili powder
¼ tsp Chili powder
Salt/Pepper to taste
Reduced fat sharp Cheddar (1 TBS per taco)
Fresh Cilantro
**Taste your ground Turkey after
**I normally use 1 TBS of sour cream but unfortunately, I
didn’t check mine and it went bad so I didn’t add it tonight. If you’re using
avocado though, you don’t really need it because you have that creamy texture
from the avocado.
**Also, adapt the seasoning depending on how spicy you like
your food. My husband has a milder preference than I do, so I made these tamer.
If you happen to overheat your food, add some honey or brown sugar to it to
cool it down. I know it sounds weird but your food won’t taste sweet as long as
you only add a little at a time to cut through the heat. My husband taught me
this trick and I thought he was crazy until I tried it and it worked!
*Directions
In a large skillet, heat ground turkey on medium heat. Break
up with wooden spoon and cook through. On low heat add your two salsas and
combine with cooked ground Turkey. Add your seasonings and combine. Add zest of
one lime and juice of half of it, stir to combine. Season with salt/pepper, taste
your mixture and adjust accordingly.
If you’re using flour tortillas, wrap about 4 with a paper
towel, sprinkle with water and microwave for about 10 seconds, just to warm
slightly. Add about 2-3 oz of your taco mix, add sliced avocado on top, TBS
cheddar, and sprinkle with cilantro.
