I'm a big fan of blondies and I plan on experimenting more throughout this year because they're just that freaking good. This morning I made a fresh batch of Cookies and Cream Blondies and they are by far one of my favorite blondies yet.
I'm a huge fan of Oreos, plus I have a bit leftover from the Truffles I made earlier in the month, so it was a no brainer to use them with this recipe. I adapted this recipe from Delish.com and if you haven't followed them on social media or gone to their website yet you need to immediately!! Their food is amazing and I often find inspiration with their posts.
Since I was trying to use what was in my pantry, the only thing I needed to buy was the Cookies and Cream bars and unfortunately, I didn't buy enough- so I had to improvise and I am so glad I did! I also wanted this blondie to be super blonde, so where typically, this recipe only called for original Oreos, I also added Golden Oreos to step up the blonde goodness. Hope you enjoy this recipe!
*Ingredients
3/4 cup original Oreos
1/4 cup Golden Oreos
1/2-3/4 cup Cookies and Cream candy bar
1/4 cup white chocolate chips
2-4 TBS semi sweet chocolate chips
2 eggs
2 1/4 cups all-purpose flour
1/2 tsp baking soda
1/2 cup dark brown sugar
1/2 tsp salt
1 cup sugar
2 tsp vanilla extract
1 1/2 sticks melted butter
*Topping
1/2 cup original Oreos
3-4 golden Oreos
1/4 cup Cookies and Cream candy bar
1/4 cup white chocolate chips
*Directions
Preheat oven to 350 degrees. Line a 9x13 baking dish with parchment paper and allow excess paper to come out so you can pull blondies from pan to cool after baking.
In a large bowl, sift together the all purpose flour, baking soda, and salt- set aside. In your stand mixer, add melted butter and both sugars. Beat until they are well combined and come together- approximately 2 minutes. Add eggs and vanilla to your stand mixer, pushing down batter from the side of your bowl if need be. Add your flour mixture about 1/3 at a time, only beat until incorporated. Add crushed Oreos and crushed Cookies and Cream bar to your batter but do not over mix. Just mix to incorporate ingredients.
Pour your mix onto your prepared dish. Use your hands to push down the batter evenly across the pan. Add your toppings to the top of your batter. Cook for about 22 minutes until the edges of your blondies are lightly golden.
Remove from oven and let sit in pan for 10 minutes. Using the overhanging parchment paper, remove from pan and let cool on cooling wrack. Cut and serve!
