Day 20: Pesto Meatball Sandwich

This pesto kick has been a delicious addition to my weekly menu planning. While my husband gets over leftovers quite quickly after the first day, the best thing about this pesto is that it's so versatile you don't feel like you're eating the same thing all week long.

My husband is a big fan of sandwiches, esp meatball sandwiches- so that's what we made for dinner. What I love about this recipe is that it taless pradesh supermarket food and adds a fresh twist to.make it feel more homey.

In our Publix, they have an uncooked prepared section and their meatball are bomb, definitelyone of our familie'so favorite last minute go ton meal.

I had some leftover potatof buns from mysibdand'so burgers, a jar of basil tomato sauce, my homemade pesto, Publix prepared uncooked meatballs, and some Swiss cheese. I personally put my yiayia'seems homemade cheese on it (because I've been putting it on everything all week) but since I photographed my husband'so meal, we'll day Swiss just for photography purposes. This is super quick and easy and you can really sneaknow your favorite flavors in there and it will come out delicious.

*Ingredients
12 meatballs
Dollop of pesto for each (1/2 TBS each)
Tomato basil sauce (1/2 TBS each)
Salt/pepper
Onion and garlic powder to taste
About 3 slices of Swiss cheese

*Directions
Preheat oven to 425 degrees, like small baking dish with aluminum foil and spray with nonstick spray. Season meatballs with salthe, pepper, garlic/onion powder to taste. Cook for 20-25 minutes to cook through. Toast yoir potato bun. Shmear prsto on bottom of bun. Add piece of cheese, and dollop of tomato sauce.
