I'm always looking for ways be to healthier because unfortunately, I'm drawn to all of the fatty goodnesses of life. One of my weaknesses is rice. I just love it. With anything and with any meal. But, when you're trying to lose or at least maintain your weight, rice is not one of your best options. I really enjoyed the slow cooker santa fe chicken from last week and originally, I paired the chicken with the rice. So, this week when my husband asked for the chicken again (that's how you know it was a successful recipe, seriously check out Skinnytaste cookbook) I was trying to find a way to make it even healthier. I was looking in my pantry and realized I haven't used quinoa in a while and that's when the light bulb went on. I love this substitute! No, it's not rice but it was delicious! I'll definitely be using this swap more often. Enjoy!
*Ingredients
1 lime
1/2 finely vhopped vadalia onion
3 garlic cloves minced
1/3 cup cilantro
chicken stock
quinoa
2 tsp olive oil
1/2 tsp salt (to taste)
*Instructions
In a large saute pan or pot wit a lid add oil and onion. Cook over medium heat until onion starts to soften and becomes fragrant. Stir in the minced garlic and salt. Next, add quinoa and cook according to the package but substitute water for chicken stalk. When quinoa is done, stir in onion garlic mixture and add in lime juice and cilantro. Enjoy!
