I was a bit ambitious with this recipe. Originally, I got it from Pintrest and it was only supposed to be a Golden Oreo Blondie... but, I had a pack of Blueberry Pie Oreos in the pantry and I figured why not switch it up a bit. I also added the butterscotch chips because, why not? The one thing with this recipe that I just did not understand is that it called for an 8 inch pan. Maybe I stuffed mine with way too much goodness but the 8 inch pan I used took FOREVER to bake through and by the time the center was cooked, the outside was way overdone and really hard. Also, maybe I shouldn't have added that extra layer of Blueberry Oreos on top? In my mind, you can never have too many Oreos but maybe somehow it was too much for the pan to handle. Either way, there are some definite tweaks that need to happen with this recipe. I ended up breaking the entire blondie in half to get a taste from the middle, which was delicious, but the rest was ruined. So, I will be remaking this but with a 9 X 13 pan so that way it's evenly cooked. Not the best recipe first time around but again, this is one of the joys of baking. Sometimes it works, sometimes you need to adjust the recipe a bit. Either way, it was tasty.. even if I had to toss most of it. Stay tuned for an update on this one!
*Ingredients
-Sugar Cookie Layer
1/2 cup butter, softened
1/4 cup brown sugar
3/4 cup white sugar
1 egg
1 1/2 tsp vanilla extract
1 1/4 cup flour
1/2 tsp salt
1/2 tsp baking soda
1/2 tsp baking powder
12 Blueberry Pie Oreos
1/4-1/2 cup butterscotch chips
-Blondie Layer
1/2 cup butter
1 cup brown sugar
2 tsp vanilla
1 egg
1 cup flour
1/2 tsp baking powder
1/4 tsp salt
1/8 tsp baking soda
1/2 cup white chocolate chips
6 or so crushed Oreos
*Instructions
Preheat oven to 350 degrees. Prepare an 9 X 13 in pan with foil or spray with non-stick spray.
First prepare the sugar cookie layer. Cream together buter and sugar until light and fluffy, about 2 minutes. Add in the vanilla and egg, mix until combined. Stir in the flour, salt, baking powder and baking soda. Mix until fully incorporated. Press the cookie dough into the bottom of hte prepared baking pan. Top with the Blueberry Pie Oreos.
Next prepare the blondie layer. Melt the butter. In a bowl combine the brown sugar and the meted butter. Whisk until smooth. Whisk in the vanilla and egg. In a separate small bowl combine the flour, baking powder, salt and baking soda. Using a spatula fold the flour mixture into the butter mixture. Once combined, fold in the white chocolate chips. Pour batter over the Oreo layer.
Bake for 20-30 minutes, a tester inserted should come out clean. Cool completely before serving.
