In case you haven't noticed, this family loves pops. There's something so satisfying about having an ice cold pop that's sweet and light after dinner while catching up on our shows. While I love ice cream and pops and even though I can literally eat sweets every single day, it's not the healthiest option.
My husband used to make a banana "ice cream" so this was my version of his creation. The only thing that took a little effort were the blueberries and this is the only place where there's some extra sugar. Other than the 1 TBS of sugar in the blueberries, these pops are just fruit, Greek yogurt, juice, and almond milk. It's the perfect after dinner refreshing treat :)

*Ingredients
1 TBS white sugar
1 tsp lemon juice
1 TBS fresh orange juice
1/4 cup fresh blueberries
2 frozen bananas, chopped (chop first, then freeze)
1/3 cup Greek Yogurt
1/4 cup fruit juice (I used white cran strawberry)
2 TBS fresh orange juice
1/4 cup almond milk
*Instructions
In a small saucepan, add blueberries, sugar, orange juice, and lemon. Cook for about 5 minutes or so, until blueberries burst and until you can move blueberries with spatula and the line holds; set aside.
In a food processor or blender add bananas, almond milk, juice, orange juice, and Greek yogurt. Blend until smooth. Pour into ice pop molds. Add about 1 tsp of blueberry mixture in each pop. Freeze overnight.
