My husband asked me to make something for some staff members so you know I had to look into my Paula Deen recipes to find something yummy to make. Since it's the beginning of fall the sound of spiced chocolate chunk cookies sounded perfect! I mean, who doesn't like chocolate chunk cookies? And lets be honest, adding some spice to them can't hurt. These cookies came out SO GOOD, I'll definitely be making a batch of these again soon!!
*Ingredients 14 TBS unsalted butter, softened and divided
3/4 cup firmly packed dark brown sugar
1/2 cup granulated sugar
1 large egg
1 large egg yolk
3 tsp vanilla extract
1 3/4 cups all purpose flour
1 tsp salt
3/4 tsp ground cinnamon
1/2 tsp ground ginger
1/2 baking soda
1/4 tsp ground allspice
1/8 tsp ground cloves
1 cup semisweet chocolate chunks
1/2 cup finely chopped toasted pecans
*Instructions
Preheat oven to 375 degrees. Line baking sheets with parchment paper. In a small skillet, cook 10 TBS butter over medium-high heat, swirling frequently, until butter is golden brown, for about 3-4 minutes after butter has been melted. Pour into a large bowl and stir in remaining 4 TBS butter until melted. Whisk in sugars, egg, egg yolk, and vanilla.In a medium bowl, wish together flour, salt, cinnamon, ginger, baking soda, allspice, and cloves. Stir flour mixture into butter mixture until well combined Stir in chocolate and pecans just until combined. Roll dough by heaping TBS into balls, and place 2 inches apart on prepared pans. Bake until edges are golden brown and center is puffed, 8-12 minutes. Let cool on pan for 2 minutes. Remove from pans, and let cool completely on wire racks.
*The cookies don't look like they're done, but at about 8 minutes they really are. When the cool, they will harden.
