*Ingredients
1/2 cup teddy grahams
2 TBS plus 1/4 cup packed light brown sugar, divided
2 pinches of fine sea salt, divided
2 ounces (1/2 stick) unsalted butter, melted
1/4 cup granulated sugar
1 1/3 cups whole milk
1/4 cup sour cream (you can use Greek yogurt too)
Seeds of 1 vanilla bean
2-3 ripe bananas
1/4-1/2 cup banana sauce (caramel, dulce de leche, etc...)
*Instructions
In a food processor, grind the Teddy Grahams into crumbs. Pour them into a large bowl, add 2 tablespoons of the brown sugar, 1 pinch of the salt, and the butter. Mix until combined and set aside.
Put the remaining 1/4 cup brown sugar, the remaining pinch of salt, the granulated sugar, milk, sour cream, vanilla, and bananas in a blender and puree until completely smooth. Pour the mixture into a large bowl, add 1/2 cup o the Teddy Graham mixture, and stir until just combined. Pour the base into ice pop molds to 1/2 inch from the tops. Add 1-2 tsp of banana sauce in each mold. Divide the remaining Teddy Graham mix among the tops of each of the ice pops, gently packing the molds. Use the stick of the ice pop mold to lightly mix in the banana sauce and Teddy Graham mix.
Let pops freeze overnight before eating and enjoy!
