Day 38: Lemon Rosemary Salmon

It's Wednesday once again which means I'm making Salmon! I made that delicious sauce last week that made my fish so tender and flavorful.. but this week, I don't have as much time and I'm still not feeling well, so I wanted a recipe that was light, quick, and bursting with flavor. I turned to my trusted Pintrest app and combined a few recipes and ended up with a delicious dish! I added Broccolini on the side of my fish and it was a perfect side to complement the Salmon. I made this recipe just for me tonight, since my husband is eating leftover meatballs so double or triple the recipe as needed.

*Ingredients
6 oz piece fresh wild Salmon
1 lemon
1/4 tsp salt
1/4 tsp pepper
3 TBS olive oil
1 TBS minced garlic
2 TBS chopped fresh Rosemary
1 tsp onion powder
1 tsp garlic powder
1 bunch broccolini

*Directions
Preheat oven to 425 degrees. Line a baking dish with aluminum foil and grease the tray. Slice the lemon and lay 2-3 slices on the baking dish in a row as a bed for your salmon to sit on. Next, place your salmon on top of lemon slices and top salmon with 1 TBS oil. Season fish with salt and pepper. Chop the rosemary and garlic and rub onto top of salmon. Top salmon with remaining slices of lemon.
For your broccolini, chop off the ends, place in pan, drizzle broccolini with 2 TBS olive oil. Season broccolini with garlic powder, onion powder, salt/pepper. Bake for 20-25 minutes, until salmon is cooked.
