I was feeling pretty under the weather today.. left work early, slept all day, and all around felt like crap. My dear husband was going to cook dinner when he got home from work but ended up coming home at like 9pm- which means I needed to make us something to eat that was going to be fast but filling.
It's been a while since I've made some meatballs and I had some ground beef in the fridge because my husband was going to make burgers, so I went with meatballs. This recipe is really basic and really easy- you literally mix everything in a bowl (with your hands), shape the meatballs, and cook them! Like I said, this is a basic recipe.. I've made some more complex but simple or hard, meatballs are delicious and one of my favorites!
*Ingredients
1 lb ground beef (I had ground sirloin, wasn't bad but I prefer beef)
3/4 cup Italian seasoned breadcrumbs
1/4 cup Greek yogurt
1 small onion
1/4 tsp salt
1/4 pepper
1 egg
1 tsp Italian seasoning
1/2 tsp oregano
1/2 tsp onion powder
1/2 tsp garlic powder
1 cup grated Pecorino Romano cheese
1 tsp minced garlic
*Directions
Preheat oven to 425 degrees. Put all ingredients in a bowl and mix with hands. Shape meatballs and bake for 20-15 minutes- enjoy!
