I'm still on my Greek kick.. maybe it's because I'm excited to see my family in a couple of days and maybe it's because its been a while since I've had some Greek food... but either way, I'm really glad I made this dish tonight.
Yesterday's post was tzatziki sauce and having it merry overnight really brought out all of its delicious flavors. Not to mention, it was one less step I had to do today- which is always a win. I love chicken souvlakia and when you're at a Greek restaurant and you're overwhelmed by what to order- chances are you can't go wrong with this.
It has a beautiful blend of traditional Greek flavors like garlic, onion, lemon, and oregano.. a soft pillowy pita bread, creamy tzatziki sauce, and perfectly seasoned tender chicken. Cooking your chicken on the grill is ideal but right now we're in the process of getting one, so I just cooked it on the stove-top and it came out delicious.
Marinating the chicken also really aids in getting a tender chicken but if you're pressed for time, it's not necessary. Hope you enjoy it!
*Marinade Ingredients (Taken from Figs and Feta and adjusted slightly)
2 TBS rosemary
3 TBS fresh oregano
1/4 cup fresh lemon juice
1/2 cup extra virgin olive oil
3-4 cloves garlic
1/4 white wine
salt/pepper to taste
1 1/2 lb chicken breast or tenders, cubed
*Directions
Add the oil, lemon juice, wine, garlic, rosemary, and oregano in a blender or food processor and blend until slightly smooth, set aside. In a zip top bag add cubed chicken and season with salt and pepper. Add marinade to chicken and put in fridge for up to three hours.
*Chicken Souvlaki Ingredients
Tzatziki sauce (about 2 tbs per souvlaki, or to your taste)
Marinated Chicken (I used 4 oz per souvlaki)
Pita bread (1 pita per souvlaki)
Feta Cheese (about and ounce per souvlaki, or to your taste)
Tomato (1 small, or to your taste)
Diced red onion (1/2-1 TBS, you don't want the onion to overpower your souvlaki)
*Directions
Pour bag of marinated in large skillet. Cook chicken on medium/medium high for about 15 minutes and then place pita bread in toaster oven for about 3 minutes or until soft, warm, and pliable. After chicken is cooked through (20-25 minutes). Take pita and put 1-2 TBS on pita and spread. Sprinkle your feta cheese on top of tzatziki, add sliced tomato, add diced red onion, add chicken, and enjoy!
