Day 29: Caramelized onion, bacon, roasted garlic, Spinach, Lemon Ricotta, Alfredo Pizza

I know, I know, it's a long title... but I wanted you to hear all of the deliciousness that is in this pizza. Now, just so you know up front- this is not a recipe to make when you're in a hurry. This is a day off, lazy day around the house and want to eat something ridiculously drool worthy.
There are a lot of parts to this and you don't have to make it all scratch if you don't want to, there are plenty of shortcuts you can buy to save you time... but this time I took the time and effort to do it all at home. I posted the pizza recipe and the Alfredo recipe over the past two days, so please refer to the last two post for full recipes.

*Ingredients
1 fresh pizza dough ball
1 batch homemade Alfredo sauce
8 oz pack ricotta
8 oz shredded mozzarella
Zest of 1 lemon
1 red onion
1 vadalia onion
1 TBS sugar
8 oz bacon
5 TBS olive oil
1 head roasted garlic
1 cup fresh spinach
4 oz feta cheese

*Directions
Make you pizza dough and while you're letting your dough rise, make your roasted garlic. Preheat oven to 400 degrees. Chop off the top of your garlic head so the tips of the garlic cloves are exposed. Place your garlic head on aluminum foil (enough to wrap the garlic head in) and pour olive oil on top of the garlic head (about 2-4 TBS depending on size of garlic head).
Once your pizza dough is rising and garlic is in the oven, work on caramelizing your onions. Thinly slice your red and vadalia onion. In a large sauce pan on medium heat add 1 TBS of olive oil and add your onions. Drizzle your onions with salt, pepper, and 1 TBS sugar. These onions will take at least 30 minutes so let them do their thing and cook down. Just keep an eye on them every now and then to ensure they're caramelizing and not burning.
While your pizza dough is rising, your garlic is roasting, and your onions are caramelizing, you're going to start working on your bacon. Mince your packet of bacon and put them in a saucepan on medium heat. Let the bacon bits cook until crispy. When they are done drain them and place on a paper towel to drain the excess oil.
At this point your pizza dough, roasted garlic, onions, and bacon should be done. Put everything aside. Don't forget to form your pizza dough and let it sit for 15 minutes to rise again. Grate your mozzarella cheese and set aside. In your saucepan where your bacon was cooked add your spinach and cook until it becomes wilted, about 3-5 minutes, set aside.
Lastly, you're going to make your lemon ricotta cheese. You just place your ricotta in a bowl with the zest of a full lemon with salt and pepper. Stir to combine and season to your taste.
Now the fun part- building the pizza!! Roll out your pizza dough to your desired shape. Place on baking sheet and using a fork poke the dough to ensure it doesn't rise too much and bake at 425 degrees for 10-20 minutes. The cooking time varies due to how thin your pizza is.
Once your pizza dough is cooked with some nice golden color on it, take your pizza out and put your oven on broil. Add your Alfredo sauce to your crust, you will probably need about 1/4-1/2 cup of the sauce, but it's totally up to you. Start off with a 1/4 cup and go from there. You don't want too much sauce because it will get soggy. Next, add your cooked spinach throughout your pizza. Add your bacon crumbles, caramelized onions, feta, and roasted garlic. Next dollop on your lemon ricotta cheese and sprinkle your mozzarella cheese on top!! Don't worry about adding too much mozzarella cheese, there are so many other ingredients on there that you don't need a huge pile but when has mozzarella cheese every been a bad thing?? Place on the top rack just until the cheese is melted and your pizza is done!!

**I know these are a lot of steps so if you want some short cuts you can buy fresh pizza dough, roasted garlic, Alfredo sauce, and bacon bits from your local supermarket and it will still come out great!
