Day 14: Stuffed Figs

I spent the day with my sisters yesterday and my second oldest sister made a delicious fig appetizer for dinner.
It was so good that I wish I had some to munch on tonight but since I was no longer at my house, I decided to recreate it for me and my mom.
In true Greek fashion I didn't go grocery shopping, I just used what my mom had available and it cane out beautifully!
Only thing I would do differently is use goat cheese like my sister did. My mom only had table cheese or cream cheese so I went with the cream cheese... looking back now, I should have gone with the table cheese because it would have been sharper but that's ok. The texture of the cream cheese was perfect and the mildness of it really let the fig shine. And let's be honest, thus trip home has been all about the figs.

*Ingredients
8 figs
4 Oz cream cheese
Salt/pepper
1 TBS Olive oil
1-2 TBS honey
25 crushed pistachios
-balsamic glaze
1/4 cup Balsamic vinegar
1/4 tsp salt
1-2 TBS sugar


Line cookie sheet with aluminum foil and set oven to broil. Slice stem off of figs and cut an X on the tops, about 3/4 way down. Add scoop of cream cheese in each fig. Drizzle Olive oil on top and season with salt and pepper.
Broil pan for 2-4 minutes or until the cheese starts to take on some color. Remove from oven and drizzle honey over figs, set aside.
In a small saucepan, heat balsamic vinegar, sugar, and salt on medium heat until it reaches a boil. Lower heat to medium low and let cool for about 5 minutes, until sauce thickens.
Drizzle balsamic glaze over figs and enjoy!
