This was the first time I've ever even heard of pumpkin butter but I came across a recipe that required it so I figured lets give it a shot. Basically, pumpkin butter is the mixture of a pumpkin pie but you cook it on the stove top instead of baking it. It had those holiday flavors that I love but I also really enjoyed the true pumpkin flavor that came through as well. This is a delicious recipe and I can't wait to play around with some creations! *Ingredients
2 15 oz cans pumpkin (3 1/2 cups)
3/4 cup maple syrup
1/2 cup dark brown sugar
1/2 cup apple juice
2 TBS lemon juice
1 tsp ground ginger
1 tsp ground cinnamon
1 tsp ground nutmeg
1/4 tsp salt
2 tsp powdered vanilla
*Instructions
In a 5 qt heavy pot, combine all of the ingredients. Bring to a boil and reduce heat. Simmer, uncovered, for 25 minutes, stirring frequently- the mixture will thicken. If the mixture is spattering, lower the heat.
Ladle the hot pumpkin butter into hot sterilized canning jars, leaving a 1/2 inch headspace. Cool for 30 minutes, then place in fridge.
