Day 61: Pressed Herb Potatoes

I found this recipe from Publix Aprons like forever ago and adapted it slightly. This side dish goes well with just about anything you pair it with and is a favorite in our house. The fresh herbs and the cheese pairs perfectly with the potatoes. This dish is a definite try!

*Ingredients
10 red potatoes (enough to fit loosely in pan)
4 TBD minced chives
3-4 TBS olive oil
salt/pepper to taste
2 TBS thyme
1 tsp garlic powder
1 tsp onion powder
1/2 tsp italian seasoning
2 tbs minced garlic
3 TBS diced butter
1/4 cup Asiago cheese (or your cheese of choice)

*Instructions
You can either boil your potatoes, or in a microwavable safe bowl, microwave the potatoes in 5 minute intervals until the potatoes are tender. Next, spray your pan with cooking spray or line with aluminum foil. Add the potatoes to the dish in an even layer. Using a fork or a potato masher, lightly press the potatoes so they burst but do not mash them. Add butter to potatoes, minced herbs, and seasoning. Top with olive oil.Cook for about 15 minutes, top with cheese and continue cooking until cheese melts. Enjoy!
