Day 59: Homemade Chimichurri

One of my favorite sauces has to be Chimichurri. It's fresh and vibrant bursting with flavor and pairs deliciously with steak, chicken, or pork.. I even put some on my potatoes tonight and it was delicious. I feel like now that I've made this, I'll have a mason jar of it in my fridge at all times, it's that good. I specifically made this batch to pair with my skirt steaks for my husband's bday and it was a huge hit. My husband even gave his dad a little mason jar to take home with him!

*Ingredients
1 cup cilantro
1 cut flat leaf parsley
4 garlic cloves
1/2 cup olive oil
1/2 red onion, diced
1/2 tsp salt
1/2 tsp pepper
1/8 tsp red pepper flakes
2 TBS red wine vinegar
2 TBS fresh lemon juice
3 TBS fresh oregano

*Instructions
Add all of the ingredients to the food processor, except the oil. Pulse the contents until incorporated and chopped evenly. While pulsing, slowly add the olive oil. When olive oil is added, pulse a few more times to ensure evenly combined. Don't forget to scrape down the sides and pulse again to incorporate fully. Enjoy!
