Day 52: Spanokorizo (Greek Spinach and Rice)

Growing up Greek, my mom cooked a homemade meal every night. Those homemade meals typically included veggies and we had to eat them whether we like it or not. Spinach was one of those veggies that we couldn't get away from, so I'm really happy that I really love spinach. This side dish was always one of my favorites, so I love incorporating it into our weekly menu whenever I get a chance!

*Ingredients
2 TBS extra virgin olive oil
3 scallions (white and green)
1 small yellow onion, diced
3 garlic cloves, minced
1 large box fresh spinach
1/4 cup orzo
1/4 tsp salt
1/2 tsp garlic powder
1/4 tsp oregano
1/2 tsp onion powder
1 lemon (zest and juice)

*Instructions
Heat olive oil in skillet and add diced onion and scallion, cook for about 5 minutes until translucent. While onions are cooking, cook orzo separately in small sauce pan (cook according to box. Boil water, add orzo).
Add minced garlic and spinach to onions until all of your spinach is cooked. Season spinach with salt, oregano, onion, and garlic seasoning. Add zest from half of lemon and 1-2 TBS lemon juice (to your taste). Stir together and enjoy!
