Day 35: Apple, Pine Nut, Bacon, Arugula, Goat Cheese, Balsamic Drizzle Pizza

I know, I know, again with the super long name... but I just wanted to clarify all of the delicious ingredients in this pizza. It came out SO GOOD, it has officially become my husband's favorite pizza that I make. Best part is, I had leftover pizza dough in the fridge from the last time I made pizza! Once we decided today was a cheat day I just pulled it out of the freezer and let it defrost in the sink, wrapped in saran wrap. I also had a little tupperware of that alfredo sauce from a few recipes as well. I hate throwing things out, so any time I can freeze something to reuse at a later time and not waste money- I'm game. So I had my leftover dough and alfredo sauce, so the only thing I really had to make was my bacon and balsamic glaze, which was no biggie. The rest of the pizza came together easily and I'll definitely be making this pizza again. Enjoy!

*Ingredients
8 oz bacon
1 cup shredded mozzarella
2 oz seasoned goat cheese (my grocery store had prepackaged goat cheese flavored with herbs)
1 cup arugula (you can adjust according to your liking)
1/2 cup ricotta cheese
1/4 cup pine nuts
1/2 Fiji apple, thinly sliced
1 ball pizza dough (see previous recipes on blog)
About 1/2 cup Alfredo sauce (see previous recipes on blog)
1/3 cup balsamic vinegar
1 TBS dark brown sugar, packed
2 TBS olive oil
1 TBS Italian seasoning

*Directions
Preheat oven to 425 degrees. Finely chop your bacon strips into bacon bits and on medium/high heat, cook in large saucepan until crispy. While cooking, roll out your pizza dough to preferred size. I like to roll mine out as large as possible to get a thin crust. Mix together your olive oil and Italian seasoning and using a brush, lightly brush the edges of your pizza. Next bake your dough for 10-20 minutes, until golden brown and fully cooked (my dough took 15 minutes this time, start at 10 and work up from there).
When your bacon is done, transfer the bits to a paper towel to get rid of excess fat. Discard the bacon grease from pan. Add balsamic vinegar and brown sugar to same pan over medium heat. Let it come to a sizzle and cook for about 4 minutes, or until it reduces in half and thickens in consistency.
When your bacon, balsamic glaze, and pizza dough are done, set your oven to broil. Thinly slice your apple and build your pizza by adding your Alfredo sauce, adding the bacon, apple slices, ricotta, goat, mozzarella cheese, a few sprigs of arugula, and pine nuts. Place pizza in oven until cheese has melted, 3-5 minutes. Add more arugula, drizzle the balsamic glaze over the pizza, and top pizza off with a sprinkle of bacon and pine nuts- and enjoy!!
