I made a basic vanilla cupcake, placed a truffle in the middle of a cupcake liner and added the batter to it.
It was that simple.
I decided not to frost these since the truffles are so sweet and I'm a simple soul who likes vanilla cake.
But then I remembered I have whipped cream in the fridge from the Strawberry Shortcake and BAM- topping for my cupcake happened :)
Vanilla Cupcake Recipe
Ingredients
1 1/4 cups cake flour
1 1/4 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
2 eggs
3/4 sugar
2 tsp vanilla
1/2 cup canola oil
1/2 cup milk (full fat)
Preheat oven to 350 degrees. In a medium bowl add cake flour, baking powder, baking soda, and salt. Whisk together and set aside. In a separate bowl add eggs and beat for about 30 seconds. Add sugar and continue to beat for another 30 seconds. Add vanilla, oil, and beat together.
Add half of your dry ingredients to the wet and incorporate but do not over mix. Repeat until all of your dry ingredients are incorporated.
Place your truffle in the middle of the cupcake liner. Pour batter on top so it just covers the truffle.
Bake for about 15-10 minutes and enjoy!
I used some of the truffles with the chocolate coating and then there were others that I left bare. I liked the bare ones better because it wasn't too sweet.
