Day 4: Chunky Monkey Butterscotch Brownies

Today has been an amazing day and deserves a sweet treat to celebrate. My husband asked me to make my dessert something healthy so I started looking at some banana recipes but the sweet tooth took over and I found something sinfully delicious and full of calories- Chunky Monkey Butterscotch Brownies.

Like I’ve said previously, I really enjoy taking a combination of two recipes and making my own of it. I was on Pintrest and found a chunky monkey brownie recipe and tried turning is a little more on the blonde side and made my own creation.

For some reason, butterscotch has been on my mind lately and I though this would be a great opportunity to incorporate it into my dessert. While my husband enjoys chocolate, I know it’s not his go to dessert so instead of using semi-sweet chocolate chips- I used a combination of bittersweet, butterscotch, and white chocolate chips.

I know it sounds like a lot and that it seems muddled but the combination was a great way to balance all of the flavors. All that yummy chocolate goodness mixed with a hint of banana really made these brownies irresistible!

Ingredients*
2 cups all purpose flour
1 ½ cups dark brown sugar
½ cup white sugar
2 sticks unsalted butter, softened
2 large eggs
¼ tsp salt
½ cup mashed banana (1- 1 ½ bananas)
1 cup bittersweet chocolate
½ cup butterscotch chips
¼ cup mix of butterscotch and white chocolate chips
3 tsp vanilla extract

Directions*
Preheat oven to 350 degrees and lightly grease a 9 x 13 baking dish. In your stand mixer or large bowl, mix together the butter, eggs, dark brown sugar, white sugar, salt, and vanilla until all ingredients are combined. Add flour, mashed bananas, 1 cup bittersweet chocolate chips and ½ cups butterscotch chips to your bowl and combine but do not over mix! Pour batter in baking dish, smoothing the batter so it is evenly distributed. Use the ¼ cup of mixed vanilla chocolate chips and butterscotch chips to sprinkle on top of dish. Bake for about 30-40 minutes, mine took about 35 minutes. The sides will get nice and crisp and the top will be golden brown. You’ll know when it’s done when you insert a toothpick in the center of the baking dish and it comes out clean.


Let them cool slightly before inhaling them… if you can… and definitely add some vanilla ice cream on top of your brownie!
